Il est connu pour sa valeur nutritionnelle car il contient plus de 20 % de prot\u00e9ines v\u00e9g\u00e9tales. La fava de Santorin est une l\u00e9gumineuse qui provient de la plante appel\u00e9e \u00ab Lathyrus Clymenum L. \u00bb Et qui n\u2019est cultiv\u00e9e que sur l\u2019\u00eele de Santorin. Sa taille pourrait \u00eatre compar\u00e9e \u00e0 celle d&rsquo;un gros grain de sable.<br \/>\nLa fava est cultiv\u00e9e ici depuis plus de 3500 ans.  La production est tr\u00e8s r\u00e9duite en raison de la disponibilit\u00e9 des terres et des conditions de croissance, faisant de la fava un v\u00e9ritable d\u00e9lice. L&rsquo;ensemencement se fait toujours \u00e0 travers des charrues et il n&rsquo;est pas rare que le fraisage se fasse avec une vieille perche.  L&rsquo;ensemencement de la fava se fait \u00e0 la mi-novembre et elle est r\u00e9colt\u00e9e en mai.
