La production de vin remonte \u00e0 des milliers d&rsquo;ann\u00e9es, autour du 3\u00e8me mill\u00e9naire avant notre \u00e8re. Les vignobles produisent des vins de fa\u00e7on continue depuis 4 000 ans, sauf pour une p\u00e9riode d\u2019environ trois cents ans imm\u00e9diatement apr\u00e8s l\u2019\u00e9ruption volcanique, o\u00f9 toute vie a \u00e9t\u00e9 \u00e9limin\u00e9e en raison de la cendre volcanique (appel\u00e9e \u00ab aspa \u00bb) et de la lave recouvrant toute l\u2019\u00eele. <\/p>\n<\/div><\/section><\/div><\/p>\n<\/div><\/div><\/div><!-- close content main div --><\/div><\/div><div id='av-layout-grid-2' class='av-layout-grid-container entry-content-wrapper main_color av-flex-cells    container_wrap fullsize'   >\n<div class=\"flex_cell no_margin av_one_half   \" style='vertical-align:middle; padding:0px 30px 0px 100px ; '><div class='flex_cell_inner' ><section class=\"av_textblock_section \"  itemscope=\"itemscope\" itemtype=\"https:\/\/schema.org\/CreativeWork\" ><div class='avia_textblock  '  style='font-size:17px; '  itemprop=\"text\" ><p style=\"text-align: justify;\">Il faut beaucoup de travail et de d\u00e9vouement de la part des agriculteurs pour cultiver dans le sol volcanique noir. De la taille \u00e0 la r\u00e9colte, tout est fait \u00e0 la main. Les vignes sont form\u00e9es pour rester pr\u00e8s du sol et cr\u00e9er une spirale, un panier naturel qui abrite les raisins et les prot\u00e8ge du vent fort. Tress\u00e9es en forme de paniers, appel\u00e9es \u00ab kouloura \u00bb, les vignes restent, les vignes restent basses sur le sol et \u00e0 l&rsquo;abri des \u00e9l\u00e9ments. Cela aide \u00e0 maintenir l&rsquo;acidit\u00e9 d\u00e9j\u00e0 brillante que poss\u00e8dent intrins\u00e8quement les vari\u00e9t\u00e9s de vin locales. Ces vents revitalisants emp\u00eachent \u00e9galement les vignes de s&rsquo;infecter avec le Botrytis et l&rsquo;o\u00efdium, ce qui r\u00e9duit consid\u00e9rablement le besoin de les traiter.<\/p>\n<p style=\"text-align: justify;\">Les vignes ne sont pas irrigu\u00e9es artificiellement et les pr\u00e9cipitations sont rares. Par cons\u00e9quent, les plantes d\u00e9pendent de l&rsquo;humidit\u00e9 naturelle et de la brume marine. Pendant les journ\u00e9es ensoleill\u00e9es, la caldera peut \u00eatre d\u00e9crite comme une \u00e9norme \u00ab casserole \u00bb naturel. L&rsquo;ensoleillement intense \u00e9vapore l&rsquo;eau de mer, qui monte \u00e0 son tour sur les pentes de la caldera. Au cours de la nuit, le changement soudain de temp\u00e9rature transforme l&rsquo;eau \u00e9vapor\u00e9e en un \u00e9pais nuage d&rsquo;humidit\u00e9 qui tombe sur la terre jusqu&rsquo;\u00e0 ce que le soleil se l\u00e8ve \u00e0 nouveau.
